Caramel Popcorn

Are you ready to indulge a little during a movie night at home? It gets hardly any better than treating yourself with homemade caramel corn. This was my daughters wish for a movie night we had together.  We watched "Bolt" . If you are a doggie lover, this one is for you. We enjoyed it a lot.

This was the very first time I made caramel popcorn myself and it wasn't hard at all. The popcorn is very quickly prepared. I used a very big pot instead of my husband's popcorn maker (I don't like cleaning it). The caramel sauce needs a watchful eye and some stirring, but is very straight forward to put together. Keep kids a little further away from the very hot caramel sauce, since you can be burned very easily. Keep in mind to add the time for baking and cooling in case you need the caramel popcorn ready at a certain time.

This will also be the perfect treat for my kids to bring along for their school dances. I will be wrapping the caramel corn in individual small bags for them to share with their friends.

* 4 quarts popped popcorn, no salt or butter added, prepared out of 2/3 cup of kernels

* 2 cups dark brown sugar, firmly packed
* 1 cup butter (unsalted)
* 1/2 cup light corn syrup
* 3/4 teaspoon salt
* 1/2 teaspoon baking soda
* 1 teaspoon vanilla extract

* 1 cup salted nuts (optional)


Preheat your oven to 225 F. Grease two baking sheets. Set prepared popcorn aside in a very big mixing bowl.

Mix sugar, butter, syrup and salt in a saucepan and bring to boil on medium/ high heat. Stirring occasionally and continue cooking until the caramel mixture reaches 250 F (measured with a candy thermometer). It will take about 10 to 15 minutes. Remove the pan from the heat and stir in baking powder and vanilla extract.

Pour the hot caramel mixture over the popcorn and mix very well. Be very careful not to burn yourself, the sauce is very hot. Divide the coated popcorn evenly onto the two baking pans (add nuts if desired). Bake in preheated oven for about 20 minutes, remove the pans and stir the mixture. Return the pans back to the oven and bake for 20 minutes more.

Spread the caramel corn on a nonstick surface to cool (wax paper or baking sheet liner).

LOVE IT!!! I will be bookmarking this to try out. Caramel popcorn is the only way I knew growing up and I can still remember the smell from the fairs. :o)

I love the look of this, I am addicted to popcorn so I can think of nothing better than caramel popcorn and a good film. I too am a dog lover, the last film I saw was 'Marley and me' cried buckets!

This looks delicious, let me see if I can ever get my act together! We have rented Bolt a few times now, my little girl loves it. It however got confusing when I picked up Balto at the library, another movie about a dog. Now she totally mixes the names up, so whenever she asks for the movie with the dog in it and says the name, I have no idea which one she is talking about...

BTW- I thought you would be happy to know, I have a very close friend visiting me right now who just came home after living in Japan for 2 years. Hey, im loving your new colour scheme for the blog! VERY NICE! As for these delicoius little bits of heaven....MY favourite. I make pop corn with salt and then at the end add some gloden caster sugar. Its so good. WHat a great little invention!
