Chicken Breast with Bacon and Boursin


Boursin is one of my favorite spreadable cheeses. A fresh baguette and some Boursin is a match made in heaven. The garlic Boursin is my favorite. I remember it being a staple in my parent's refrigerator growing up in Germany.

Here the Boursin is spread on a chicken breast and surrounded by bacon. Tomatoes are roasted alongside. This makes for an easy and very tasty dinner. Enjoy!


Serves 4 to 6.

Ingredients:

*   4 large boneless skinless chicken breasts
*   200 g Boursin cheese or 100 g local garlic & herb spreadable cheese
*   12 slices smoked streaky bacon or 4 -8 slices pancetta (don't use thick cut bacon slices!)
*   1 teaspoon olive oil
*   20 -24 cherry tomatoes, on the vine or bigger ones
*   salt
*   fresh ground black pepper

Directions:

Preheat the oven to 375 F.
Lightly oil an oven proof dish with the teaspoon of olive oil - using a pastry brush is best.

Place one chicken breast between a large piece of cling film and gently beat it with a cook's mallet - beating until large and fairly thin - try NOT make any holes in the chicken! Repeat with the other  chicken breasts. Place the chicken breasts on a work board and spread half the Boursin cheese on each chicken piece - make sure it is spread evenly right up to the edges. Roll the chicken breasts up - tucking the last small "fillet" flap up and into the stuffed roll. Wrap the bacon pieces or pancetta ham around the stuffed chicken, making sure they do not overlap too much and the edges are sealed underneath.
Gently lift them into the oiled oven dish.
Season well with freshly ground black pepper. (Season with salt to taste - the bacon will make it quite salty, so watch out when seasoning with salt.). Scatter or arrange the tomatoes around the chicken pieces.
Roast for between 45 - 55 minutes; the cooking time depends on the size of the chicken breasts and your oven. Remove from the oven and place the chicken breasts on a plate - you can serve them whole or sliced. Serve with the roasted tomatoes.

My mother in law would love this. I really shouldn't be sharing this but in her words she "can't get enough of Boursin" .... except she didn't manage to say the B and it sounded more like an F in its place. We've not let her live it down just yet lol

Kirsten, just wanted to let you know I made this tonight and it was great. I loved how easy it was to put together. Next time I make it, I will take the cheese out of the refrigerator way before I'm ready to assemble. My refrigerator is really cold and the cheese definitely wasn't spreadable! Thanks again.
