A Warm Welcome Back With A German Almond Peach Cake!


Welcome back everybody!

If you have ever visited Germany, you know how lovely it is to stop at a Konditorei, pick your favorite piece of cake or torte, and enjoy it sitting at one of the store's outside tables in the sunshine with a good cup of coffee. You can sit there forever watching people pass by while chatting with one of your friends.

Yes, we had a wonderful month in Europe. Home is where your heart is and a piece of mine is definitely in Germany with my family and friends. I miss them all so much.
I promise to share some of my travel pictures in the upcoming posts with all of you. At the moment I am still fighting with my laundry.

Nevertheless, I found some time to bake a German peach cake with some fresh Colorado peaches from Palisade, purchased at my local farmers market. The peaches are combined with almonds and cream in this very easy to assemble baked good. It was the perfect treat for our Sunday afternoon coffee break, almost like visiting a Konditorei.

My family gave it big thumbs up and therefore it will become a keeper recipe. I could also see this cake baked with fresh cherries or apricots. Give it a try!



Ingredients:

*  3 fresh peaches, about 28 oz. ( 800 g)
*  1 and 2/3 cups ( 200 g) flour
*  2 teaspoons baking powder
*  2/3 cup and 1 tablespoon ( 160 g) sugar, divided
*  2 Tablespoons sugar, for topping
*  1 package vanilla sugar or 1 teaspoon vanilla extract
*  1/8 teaspoon salt
*  2 large eggs
*  7 Tablespoons ( 100 g) butter, cut in pieces, room temperature
*  1/2 cup and 1 Tablespoon (125 g) heavy whipping cream
*  3.6 oz. ( 100 g) ground almonds
*  1/4 cup (50 g) sliced almonds, for topping



Directions:

Preheat the oven to 350 F Convection (200 C). Butter and flour a 10 inch (26 cm) spring pan, set aside.

Peel and pit the peaches and slices them in quarters.

In a bowl mix together flour, baking powder, salt, vanilla sugar and 1/3 cup (75 g) sugar. Add 1 egg and butter. In a kitchen machine knead the ingredients until well combined and a dough forms. Press the dough evenly in the bottom of prepared spring pan. Poke dough evenly with a fork. Set aside.

Whip the cream until stiff peaks form. Mix in 1/3 cup plus 1 Tablespoon sugar, 1 egg and ground almonds.  Spread cream mixture evenly on top of the dough. Place peaches (inside up) on top of the cream mixture. Sprinkle with sliced almonds and two Tablespoons of sugar.

Bake in preheated oven for about 40 minutes.

So there was peach cake on both sides of the ocean today ;-) I (living in Germany) made one this weekend for my colleague's birthday today. But because I only had a bit less than two peaches left, I combined them with a handful of blackberries - a very good match. And almonds, of course.

I made this last night and my husband pronounced the recipe as worthy of sending to our German relatives. High praise from him.

I have one question: when I took it out of the oven the first time it was jiggly in the middle. I put it back in for another 10 minutes and it was better but still a little loose. What is the center supposed to look like when it's done?

@Coleen: My oven seams to be on the hotter side and I always bake on Convection. 40 minutes was perfect for me, but yes, it was not jiggly in the middle, may a little loose, yes. The center looked the same as the outer parts. I am so glad you and your husband enjoyed the cake. It is an original German recipe, that came from a German magazine. Hope the relatives back home in Germany like it as well. Where do they live?

Just found a great little German bakery in Arvada. Reminds me of my first Army assignment. Had a buddy with an apartment that was the floor above a bakery. We'd go to PT, burn off 500 calories, then hit the bakery and put 1,000 back on!

We have relatives all over Germany, many of them near Hamburg, Regensburg, and Hannover. All of his family were originally from Silesia and got scattered across Germany after the war as refugees. We just returned from a visit as well.

The baking and cooking still reflects the region. This is a wonderful site and thanks so much for the recipes.
